BAKED APPLE LAVA OATS

This baked apple lava oats are the perfect start into your day for when you need something that warms you from the inside out.
The taste of cinnamon, almond and apricot make it the ideal breakfast for a cold winter day.
This recipe is for all porridge lovers who are looking for some new inspiration how to create a "new" style of their oatmeal, yet is a super easy recipe.
Actually, all you need for the oatmeal apple is an apple, oats and water. But when you want to make it taste a little bit more special just go on and follow my recipe!
This porridge recipe is for one person, feel free to double, triple or just multiply it!
For the oatmeal:
1 big apple (I used boskoop apple)
1 tbsp oatmeal
1 tbsp oats
1 tbsp millet flakes
1 tbsp chia - or linseeds + 1,5 tbsp water
1 tbs chopped almonds
1 tbsp raisins
Half of a banana
50-75 ml soy milk (or milk of choice)
0,5 tsp cinnamon
0,25 tsp bourbon vanilla
pinch of salt
For the lava filling:
1 tbsp almond butter + 2 tbsp soy yogurt
1 tbsp apricot jam
Hollow out the apple and set aside.
Mix the chia -or linseeds with 1,5 tbsp of water and let it thicken.
Mash the banana.
Put everything together in a mixing bowl and stir well.
Preheat your oven to 200 degree Celsius.
Mix almond butter with soy yogurt.
Fill the apple with half of the oatmeal. Add half of the almond butter and yogurt mixture, then add the apricot jam and the rest of almond butter and yogurt mixture. Add the rest of the oatmeal and put the lid of your apple back on it.
I sat my apple in an appropriate, ovenproof container to prevent it from topping over. Bake for 15-25 minutes, depending on how soft you want your apple to be.
At least, sprinkle with some more cinnamon or sugar.
