BOUNTY STYLE CAULIFLOWER OAT PUDDING

If you love coconut and chocolate this will be your new favorite snack on hot days. It is super refreshing and also a great energy booster.

As a child, I loved to eat bounty bars and these bounty style cauliflower oat pudding always gives me a little flashback to my childhood.


What if I told you that you can put CAULIFLOWER in your oats and it will be so filling, delicious and nutritious that it’ll become one of your faves? I know it sounds crazy, but these cauliflower oats are going to blow your mind!

It is a perfectly creamy oat pudding, made with oats, cauliflower, coconut flakes and banana. There is no need to add any liquid because the cooked cauliflower will have enough in itself. If the oat pudding seems too dry, you could add some plant based milk or water.

I promise you that you won't taste the cauliflower in the end at all and that you will absolutely fall in love with this refreshing snack or breakfast .

It is so easy to make and due to the cauliflower, which is rich in fiber, it will keep you full for longer. I love to eat this oat pudding as a breakfast or as a snack on a hot summer day.


If you know you need a quick breakfast the next day, you can make this oat pudding the night before and place it in the refrigerator overnight.


If you have frozen cauliflower in your freezer, you could also blend all ingredients to get a nice cream bounty bowl. There will not be a need to cook the cauliflower before.


Serves: 1

Time: 20 minutes + 1 hour resting time (minimum)


Ingredients:

  • 4 tbsp oats

  • 200 g cauliflower

  • 1 tbsp coconut flakes

  • 1/2 mashed banana

  • 1/2 tsp vanilla extract

  • 1 tbsp sweetener of choice (agave/maple syrup or any sugar you like)

  • 20 g chocolate


Instructions:

  1. Chop the cauliflower and cook in boiling water for up to 15 minutes, depending on how big the cauliflower pieces are. They should be very soft in the end. Drain the water and mash the cauliflower with a fork.

  2. Optional: Blend the oats until you have a fine oat flour.

  3. Mix all ingredients in a bowl and set in the refrigerator for at least one hour or overnight.

  4. Before serving, microwave chocolate until melted and pour over the cauliflower oats. Add your favorite toppings.
