HEALTHY SINGLE SERVE BROWNIE

Cocoa Powder. The best and easiest way to achieve major chocolate flavor.




To all the chocolate lovers out there!

This healthy chocolate bomb brownie is sugar-free, oil-free, dairy-free, gluten-free (if wanted), super fudgy and perfect for anytime when you're craving some sweet treat.

The brownie is made without butter or eggs and contains a number of healthy ingredients! Perfectly fudgy and moist, topped with my all time favorite frosting!




Ingredients:

For the brownie

  • 2 Tbsp (gluten-free) oat flour

  • 1 Tbsp protein powder (or 1 Tbsp oat flour)

  • one big soft medjouul date OR 1 Tbsp agave or maple syrup OR sugar of choice

  • 100 ml / 7 Tbsp milk

  • 1 tsp cocoa powder

  • pinch of salt

  • 1/2 tsp baking powder

  • vanilla


For the frosting:

  • 2 Tbsp coconut cream (could substitute with frozen, sliced banana OR 2 Tbsp nut butter of choice)

  • 1 Tbsp chopped dark chocolate

  • 1 Tbsp sugar (coconut, erythritol or cane sugar)

  • Pinch of salt

  • 1 Tbsp cocoa powder

Instructions:

  1. Preheat oven to 180 degree Celsius (350 degree Fahrenheit)

  2. When sweetening with dates: In a food o processor or mixer process the date and milk.

  3. Mix all ingredients, put into a cupcake form (or any form you like) and bake for 30 minutes.

  4. In the meantime prepare the frosting. Process all ingredients. When using frozen banana let thaw for 5-10 minutes before processing. Put the frosting back into the refrigerator.

  5. When ready put the brownie out of the form, let cool for 10 minutes. Top with frosting.

  6. Add toppings like coconut flakes and chopped goji berries.
