POTATO-JACKFRUIT-(BURGER) PATTIES


These simple and delicious vegan potato-jackfruit-patties are not only the perfect patty for your vegan burgers, but also they are appetizing without bread on a mixed salat or simply with a side dish like French fries.


They are incredibly easy to make and the ultimate healthy "junk food" replacement.


This recipe makes 4 big burger patties.

If you intend to eat it without bread this recipe is for 2 people.








Ingredients:

For the patty:

  • 200 g potato

  • 140 jackfruit

  • 2 tbsp nutritional yeast

  • 2 tsp psyllium husks + 5 tbsp water

  • 2 tbsp chickpea flour

  • 1 tbsp rapeseed oil

Spices:

  • 2 tbsp soy sauce

  • 1 tbsp miso paste

  • 1 tbsp tomato paste

  • 1/4 tsp liquid smoke

  • 1,5 tsp salt

  • 0,5 tsp pepper

  • 1 tsp smoked paprika

  • 0,5 tsp chili powder

  • 1/4 tsp ground garlic

  • 0,5 tbsp dried oregano

Instructions:

  1. Heat 1 liter of water in a pot and cook the potatoes in gently boiling water for about 30 minutes or until the potato falls off of a fork inserted into it. Drain the water let cool the potatoes.

  2. Marinate the jackfruit and with all the spices, pull it a little bit and set aside. Mix psyllium husks with water and set aside until thickened.

  3. Peel and mash the potatoes with a fork.

  4. In a mixing bowl, add mashed potato, marinated jackfruit, nutritional yeast, psyllium husks and chickpea flour and mix well.

  5. Form your patties.

  6. In a pan, heat 1 tbsp of rapeseed oil. Fry each patty for 3-4 minutes on medium heat until golden brown and serve with your favorite buns or salad.
