These super easy overnight oats are amazing if you know you need a quick breakfast! Simply mix everything together the night before and enjoy the next morning. The caramel crust literally gave me everything!

The texture of these overnight oats is super tempting, so soft and creamy with a raspberry flavor due to fresh berries! It is sweet, but not too sweet - simply perfect.

I made the caramel crust out of coconut oil, agave syrup and peanut butter.

You could substitute gave syrup with maple syrup or any other liquid sweetener you have at home.

If you prefer using another nut butter like almond butter, feel free to do so.

Serves: 1

Time: 5 minutes prep time + refrigerator overnight


For the oats:

  • 4 tbsp oats

  • 1 tbsp chia

  • 1/2 mashed banana

  • 8 tbsp milk

  • 3 tbsp mashed raspberries

  • vanilla to taste

For the crust:

  • 1 tsp coconut oil

  • 2 tsp peanut butter

  • 1 tsp agave syrup

  • cinnamon and vanilla


  1. Mix everything for the oats and put it in the refrigerator.

The next morning:

  1. In a tiny cup, mix all ingredients for the caramel crust and microwave for 10 seconds.

  2. Pour over the oats and put it back in the fridge for about 15 minutes or until hardened.
