Most important rule when making your own sourdough: Never throw away the sourdough discard - better make some pancakes with it!

These sourdough discard vegan pancakes are ready in LESS THAN 20 MINUTES! Loaded with banana, chocolate, chopped almonds and coconut flakes this is definitely my "Never gets boring" vegan Sunday brunch!

I love making breakfast with my sourdough discard and these pancakes are definitely one of my favorite things to make with it!

These sourdough pancakes are incredibly fluffy, tasty and super easy to make.

This recipe makes 6 pancakes.

If you want to make them without sourdough, simply swap the sourdough discard in this recipe with 50 grams of flour + 50 grams of milk or water.


For the pancakes

  • 100 g sourdough discard

  • 20 g protein powder @myproteinde

  • 20 g flour

  • 100 g applesauce

  • cinnamon

  • 15 g sugar

  • 40 ml milk

  • 1/2 tsp baking powder

  • vanilla (I used vanilla flavdrops from myprotein)

  • coconut oil for frying

For in between

  • small banana

  • coconut flakes

  • homemade chocolate cream (LINK IN BIO) + splash of milk

  • chopped almonds


  1. Mix all ingredients except coconut oil. Heat coconut oil in a pan.

  2. Fry the pancakes for 3 minutes on each side.

  3. In a tiny pan heat chocolate cream and splash of milk. Mix well to get a super smooth and more liquid chocolate sauce. Cut the banana into slices and chop the almonds.

  4. Put banana slices, chocolate sauce, chopped almonds and coconut flakes between each pancake layer.
