Wholegrain-Sesame-Dried Figs-Christmas Cookies

Are you tired of old-fashioned Christmas cookies? This Wholegrain-Sesame-Dried Figs-Christmas Cookies are the ideal twist to regular Christmas cookies. Not only are they easy to make and super delicious, but also oil and sugar-free!

The sesame and figs harmonize perfectly and give the cookies an oriental note.



Ingredients:

Batter:

  • 240 g wholegrain spelt flour

  • 5 tbsp sesame seeds

  • 1 tsp baking powder

  • 0,5 tsp salt

  • 9 soft dried figs

  • 3 tbsp tahini

  • 120 ml water

  • 1 tbsp soy flour + 2 tbsp water (or any other egg replacement of choice)


Filling:

  • 10 soft dried figs


  • 50-75 ml water

  • 1 tbsp tahini

  • 1 tsp cinnamon

  • 1/2 tsp bourbon vanilla

  • 1 tbsp sesame seeds




Instructions:

  1. Roast all sesame seeds (6 tbsp) in a pan on medium/low heat for about 5-10 minutes until golden brown.

  2. Mix soy flour with water and set aside.

  3. In a mixing bowl add 5 tbsp of sesame seeds and all dry ingredients for the cake batter, including flour, baking powder and salt.

  4. Chop your dried figs and blend with water and tahini in your food processor.

  5. When blended, combine the figs-water-tahini mixture with the dry ingredients in your mixing bowl and knead until you have a dough ball. Put the ball in a plastic wrap and refrigerate for at least 30 minutes.

In the meantime prepare the filling for your Christmas cookies.

  1. Chop the figs and blend with water and tahini until you have a jam similar paste. Add cinnamon, vanilla and sesame seeds.

Baking

  1. Preheat your oven to 160 degree Celsius.

  2. Take the cake batter and knead well once more before rolling out. On a flowered surface roll out the cookie batter and cut out the biscuits with your favorite cookie cutter (cutting a hole in every second one)

  3. Bake for 12-15 minutes, then let cool for 10 minutes on a grid. Do not let the cookies cool completely, otherwise they will break easier when assembling.

  4. On each cookie without a hole add 1-2 tsp of your filling, depending on how big your cookies are. Carefully press the biscuits with the hole onto the prepared biscuits with the figs paste.

  5. Optional: Dust with powdered sugar and ENJOY :)))
